In a bowl, mix 1 cup grated cheese ( I used mexican blend) and 1 cup all purpose flour, 1/2 cup finely chopped onion, 1/4 cup dahi, finely chopped dhaniya chilly flakes, salt and a little bit of Italian seasoning. Make a smooth dough and divide it in 10 -12 equal parts. With clean wet hands make balls out of the parts. Now take a ball at a time and flatten it gently on your palm and add 1 tsp cream cheese and seal the ball nicely. Prepare all the kabab balls with filling and set aside. Then heat up the oil for shallow or deep frying. Take some oil in your hand and flatten each kabab ball gently and shallow or deep fry with 3 or 4 kababs at a time. If you are deep frying, make sure you do that on medium. We don't want the oil to be too hot or the kababs will darken fast and not be thoroughly cooked. Enjoy with green chutney.
